Casarecce alla Genovese

Looking for a warming, delicious and rich pasta dish? Casarecce alla Genovese is another recipe from our friends at La Scarpetta Trattoria in Margaret River. The recipe is originally from Campania in the south west coastline of Italy near Naples. Try it today with a glass of our Fimiston Shiraz.

INGREDIENTS

500g beef chuck

500g brown onion

500g red onion

100g lard

Half glass extra virgin olive oil

Salt and Pepper to your liking

METHOD

Cut the meat into little pieces and let it sear in a large pot with olive oil and lard. Add salt and pepper.

When all the meat is seared, add the onions that you previously sliced and let it stew until all the onions are melted and the sauce is nice and creamy.

For the pasta

Put a large pot full of water and salt on the stove and bring it to boil, then add 500 g of caserecce pasta

Once cooked drain it and add the genovese sauce and mix it all together until the sauce and the pasta are nice and smooth.

And of course you can pair this pasta with a delicious bottle of Brown Hill Fimiston Shiraz.
