Single variety Semillon is a rarity in Margaret River, so we select our best fruit and give it the golden treatment. Small parcels are hand picked and fermented both in french oak with indigenous yeast and in stainless steel. Barrel ferments are left on lees to age and stirred weekly for 3 months to build texture and body. Our top portions are then blended to create a small quantity of complex textural wine with viscosity and a long mineral acidity.
With a bright palate showcasing notes of lychee, lemongrass, white florals and a zesty acidity, this powerful wine will pair well with fresh Asian style cuisine.
